Wayside Cider, as it would come to be known, was born out of a friendly competition between an amateur cider-maker with aspirations of going pro and a cider connoisseur who didn’t mind getting his hands dirty.  With a little push from a mutual friend who would later become the official Cidery Muse, we decided to forgo competition and try collaboration instead.  We don’t see eye to eye on everything, leading to a fair number of lively conversations in the cidery, but we are in 100% agreement on two matters- we want to make the best cider we possibly can, and we want to do so right here in Delaware County.  So, with a whole lot of planning and the requisite blood, sweat, tears, and elbow grease, we have established Wayside Cider in a revamped garage on Irene’s farm in East Delhi (it’s a little bit east of Delhi).
